Fro-Yo Fruit Bars

FROzen YOgurt Fruit Bars are so easy and SO satisfying ~

This recipe is perfect to tweak with your favorite fruits / flavors and make it your own! 🙂

Fro-Yo Fruit BARS

Ingredients:
1 1/2 cup non fat greek yogurt (I used 3/4 cup plain and 3/4 cup vanilla)
2 tablespoons honey (can add more if you like it sweeter, I skipped this using the vanilla yogurt)
3/4 cup chopped mixed berries

Directions:
Mix all ingredients together. Line in an 8×8 baking dish and place in freezer. Once frozen cut into bars.

Streusel Layered Coffee Cake ~ oh yum!

Do you have that special request  – like from your son … and he gives you that ‘look’ that makes you melt???  Yeah, he did THAT look ~ and so I had to come up with a recipe that was gonna be EASY, quick  and use the ingredients I had on hand… I found one I had made before and modified it to come up with one REALLY good coffee cake recipe!   It is a HIT !  Mix in 2 bowls… (easy, right??)  bake and have a delicious breakfast, snack, dessert in absolutely no time!

Streusel Layered Coffee Cake

Yield: 9 generous pieces

1 egg

¾ cup sugar

1 tsp vanilla

1/3 c butter (melted)

½ c milk

1 ½ c AP flour

2 ½ tsp baking powder

½ tsp salt

Streusel topping:

½ c light brown sugar, packed

2 Tbsp soft butter, not melted

2 Tbsp AP flour

1 tsp cinnamon

1/3 cup chopped nuts (your favorite)

 

Mix topping in a small bowl and set aside.  Heat oven to 375°F, spray an 8X8 dish with cooking spray and set aside.  In a large bowl, whisk together egg, sugar, vanilla and melted butter until smooth.  Add flour, baking powder and salt.  Whisk JUST until blended.  Place ½ of the batter in the prepared dish and spread over bottom.  Layer ½ of the streusel topping. Add rest of batter (HINT: dollop over the streusel topping and spread evenly, this way is MUCH easier to not disturb the streusel layer) and add the rest of the topping.  Bake 25-30 minutes or until done.  Cool completely, can top with powdered sugar, make a sugar drizzle or eat just like it is … delicious! ~Enjoy!

Quinoa Bacon and Veggie Frittata

Wanna come by for lunch?? This is what I had today ~ YEAH baby!! Soooo good and healthy 🙂 I’ll set another plate for ya!

Quinoa Bacon and Veggie Frittata

Yield: 6 muffins (can easily be doubled!)

1/4 c quinoa

1/2 c water

1/4 c cooked broccoli, cut into bite sized pieces

1/4 c total red and green peppers, diced

1/4 c cherry tomatoes, cut into 4th’s

1/2 tsp dried onion bits

1 tsp Italian seasoning

1/4 c each mozzarella cheese and cheddar cheese

2 Tbsp parmesan cheese

1/4 c bacon bits (2 slices cooked and crumbled)

2 eggs

1/4 c mayonnaise (I use Olive Oil, reduced fat)

S & P TT (to taste)

Preheat oven to 350°F.  Spray the muffin tin well or use cupcake liners and set aside.

Place quinoa and water in a small saucepan and bring to a boil.  Reduce heat, cover and simmer for 10 minutes.  Meanwhile, mix in a med sized bowl the remaining ingredients and combine well.  When quinoa has absorbed the water, add to the mixture and stir together.  Place evenly into prepared muffin tin and cook 20 – 25 minutes until puffed and lightly browned.  Remove from oven and let set for a minute to two before removing from the pan.  Enjoy ~

Strawberry Cream Cheese Pull-A-Part Bread

…as I’ve stated before, I DO NOT keep any foods as ‘off limits’ ~ I DO keep in mind my portion sizes and balance the meal with other lower fat/calorie option foods…

STRAWBERRY CREAM CHEESE PULL-A-PART BREAD

2 tubes (10 ea) small canned biscuits
2 oz Neufchatel cream cheese
2 Tbsp Strawberry Jam (or your favorite preserves!)
1/3 c sugar
1 Tbsp cinnamon

Glaze
½ c powdered sugar
1 Tbsp 1/2 and 1/2 milk
1 tsp butter, softened NOT melted

Preheat oven to 350°F. Spray a pie pan with non-stick spray. Combine sugar and cinnamon in a small bowl and set aside. Combine cream cheese and jam in another small bowl and set aside. Remove biscuits from tubes and flatten slightly with your fingers. Dip both sides of biscuit in the sugar mixture and lay on a plate. Place scant tsp of cream cheese mixture in the center of each. Shingle in the pie plate evenly and sprinkle any remaining sugar mixture over the top. Bake 20-25 minutes or til golden brown and done. Remove and make glaze. Allow bread to sit for a few minutes to cool slightly. Glaze will be thick, can thin in desired, but remember the heat will make it spread. Drizzle over the top and serve warm! ~Enjoy!

“Cookie” Oatmeal

DO YOU ♥ OATMEAL??? Then you will ♥ this oatmeal that tastes like a cookie ~ It is an OLD weight watchers recipe that I have made for YEARS and my boys (now grown) love it too ~ slow carbs + protein… a WIN-WIN!

“Cookie” Oatmeal
Yield: 1 serving

1/3 c old fashioned oats
¼ tsp chia seeds
¼ tsp flax seeds
1-2 tsp brown sugar
½ – 1 tsp peanut butter, to your taste
2/3 c + 2 tsp cold water

Place all ingredients in order in a microwave safe bowl. Cook on power 7 for 3 min, 30 seconds. Remove and stir. Top with small dollop of butter before eating, if desired.

… I love this oatmeal and it is one of my GO TO recipes ~ feel free to add fruit it you want to (banana is awesome in here!)

Ham ‘n Oats Waffles ~ YUM!!!

Waffles, packed with the goodness of protein (I used ham, but have also used cooked sausage or bacon…) and the power of oats to keep ya going all day! 🙂

Ham ‘n Oats Waffle
Yield: 2 Belgian waffles

‘These are soft, delicious waffles full of slow carbs and protein to start off the day’

1 cup baking mix (your choice)
¾ c quick cooking oats
1 Tbsp flax seeds
1 egg
3 oz ham, diced small
1 cup club soda

Preheat waffle iron. In a large bowl, mix all dry ingredients. Add egg and club soda; the mix will be thin. Let set for up to 5 minutes to allow oats to plump. Spray hot iron with cooking spray. Use 1 cup mix per waffle. Cook til is desired brown and crispness. ~Enjoy!
…can substitute any meat / fruit for the ham as desired!

Flourless Blender Muffins

I’ve made these SEVERAL times and added my own twists to them…  ~ use your imagination and MAKE these today!

FLOURLESS BLENDER MUFFINS ~ These are a healthy version for muffins!!!!

Ingredients:
2 1/2 cups dry oatmeal
Single serving container of any type or flavor yogurt (your favorite!)
2 organic eggs
1/2 cup coconut sugar or regular sugar (coconut is best for health)
1 1/2 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

Directions:
Use non-stick spray or grease with coconut oil (do not use paper muffin cups, they will stick to the paper).

Blend all the ingredients in blender on your highest setting until smooth. You may need to blend the oatmeal first if you do not have a high powered blender like a VitaMix and then add the remaining ingredients. If you do not have a high powered blender you will need to stir by hand in between blending to make sure all ingredients are mixed thoroughly. ***I use my NutriBullet!! 🙂

Note: You can also add a cup of chocolate or peanut butter chips into the batter (mixed in by hand) the kids would love this!

Pour batter into muffin tins dividing equally
Bake in pre-heated 400°F oven for 20-25 minutes until toothpick inserted into center of muffin comes out clean.
Remove muffins carefully and let cool. Enjoy!
This recipe makes 10 – 12 Yummy muffins.
