Tropical Fruit Compote Sundae


I LOVE fruit ~ cooked fruit is somehow decadent … especially if you add some awesome flavors to take it to the next level! This recipe is one that does JUST that…and I didn’t feel guilty ~ uber healthy! Give it try for your special Valentine ! ♥

Tropical Fruit Compote Sundae

Yield: 2 servings

1 apple, peeled and halved – core removed

1 pear, peeled and halved – core and stem removed

1 tsp orange zest

1/2 orange juice (app 3 Tbsp)

1/4 cup water

2 Tbsp coconut, shredded

1/4 cup coconut sugar

1/4 tsp vanilla extract

Toppings: whipped cream, toasted coconut, cherry, chocolate syrup

In a med sized pan, place all ingredients from apple to coconut sugar.  Allow to come to a boil and reduce heat to a simmer, cover and cook for 5 minutes.  Turn fruit over carefully with a slotted spoon and cover, cook for another 5 minutes.  Remove fruit and add vanilla to syrup.  Bring to a boil and reduce liquid to 1/2 (be careful to stir and watch closely, will reduce quickly and will burn if left unattended).  Place fruit in shallow serving bowl, divide syrup evenly and top with your choice of toppings.  The amount you put will determine how healthy you keep this desert, but a small amount of toppings goes a long way.    Serve warm ~ enjoy!
