Well…found this AWESOME site http://www.paleomg.com and was inspired to ‘try’ a Cauliflower dish…I was totally blown away at how rich and delicious this recipe turned out! If you are not too sure about this veggie, don’t say ‘NO’ before you have made and devoured this meal! 🙂
1/2 lb lean ground beef
1/2 onion, diced small
1 small red pepper, diced small
1/4 tsp cumin
1/4 tsp paprika
1/2 cauliflower, cut into med sized pieces
S & P TT (to taste)
1/4 tsp garlic powder
1/4 c Cheese, to top dish (your favorite, I used cheddar)
Preheat oven to 350°F and spray a baking dish with nonstick spray (or use coconut oil). Boil cauliflower til soft (app 15 minutes) in salted water, drain and mash with a potato masher. While veg is boiling, brown beef with onion, pepper, cumin and paprika in a sauté pan. Drain well and set aside. Season meat with S & P. Whisk eggs with garlic powder in a small bowl. Mix cauliflower and meat together, WHILE CONSTANTLY STIRRING THIS MIXTURE, add the eggs and stir until incorporated (must stir to keep eggs from becoming scrambled). Pour into the prepared baking dish, top with the cheese and bake for 30 minutes. Remove, let set for at least 5 minutes, serve. ~Enjoy!!
***If you are watching your fat intake, use precooked beef that you cooked, drained and rinsed well. I do this often and freeze in 1/2 lb quantities to use in recipes as needed.
