Meatball ‘n Pasta Bake

One of my FAVORITE foods is PASTA… Mmmmm 🙂  … Sooo, I had to make a dish that I felt good about eating / serving.  Here is the outcome ~ and it is AWESOME ~

Meatball ‘n Pasta Bake

Yield: 6-9 servings

3 c whole wheat pasta (I used Rotini) uncooked

1 1/2 c water

1 1/2 tsp Italian seasoning, divided

1/2 tsp each garlic and onion flakes

1/4 tsp kosher salt

16 frozen prepared meatballs

16 oz (or 2/3 jar) pasta sauce

1 1/2 c Ricotta cheese **

1 c Mozzarella Cheese, shredded

1/2 c Parmesan Cheese, shredded

Additional 1/2 c Mozz cheese and 1/4 c Parm for topping

Preheat oven to 375°F.  In a 9×9 square dish, place pasta, water, 1 tsp Italian seasoning, garlic and onion flakes and salt.  Stir to combine.  Lay meatballs on top of this and pour the pasta sauce over top.  Mix in a med sized bowl: Ricotta through Parmesan cheese with remaining 1/2 tsp Italian seasoning.  (**If do not have Ricotta, use Cottage Cheese that has been made smooth in your food processor / blender / Nutribullet).  Spread this over the top of the pasta sauce and top with Mozz and Parm cheeses.  Cover tightly with foil and bake for 40 minutes or until pasta is done and cheeses are bubbly.  Remove foil and continue to bake for 15 minutes to brown the top.  Let rest for 5-10 minutes and serve! ~Enjoy

Cappuccino in a Jar

OMGoodness… the BEST hot drink mix I have made to date ~ Delicious coffee chocolate flavor with a hint of  cinnamon and nutmeg ~ Oh, gonna go make a cup right now!

Prep Time: 10 Minutes
Ready In: 10 Minutes
Servings: 25 drinks

INGREDIENTS:
2/3 cup instant coffee granules
1 cup powdered non-dairy creamer
1 cup Sugar Free powdered chocolate drink mix (Nesquick!)
1/2 cup Stevia
3/4 teaspoon ground cinnamon
3/8 teaspoon ground nutmeg

DIRECTIONS:
1. Have ready 2 (12 ounce) canning jars. Put the instant coffee into a food processor, and process to a fine powder. If you don’t have a food processor, put it into a large plastic bag, and crush with a rolling pin. ***SEE BELOW***
2. In a large bowl, combine creamer, chocolate mix, instant coffee, sugar, cinnamon, and nutmeg. Stir together until well mixed. Spoon into 2 – 12 ounce jars.
3. Attach a note to each jar that reads: Cappuccino: Mix 2 tsp of powder with 6 fluid ounces hot water.
*** I PUT ALL INTO MY NUTRI BULLET AND USED THE FLAT BLADE… IT WAS BLENDED AND SMOOTH IN ABOUT 15 SECONDS… PERFECT!  ***

Rosemary Cider – Glazed Chicken w/ Browned Butter Pecan Rice

Chicken…rice…herbs…pecans … CHECK!    All you need for a fantastic meal in under 30 minutes!!  LOADED with protein and good carbs ~ add a side salad and BAM!  You’re a genius!! 😉

Rosemary Cider – Glazed Chicken w/ Browned Butter Pecan Rice
Yield: 4 servings
20 minutes ~ start to finish…

4 chicken cutlets (breasts pounded to ½” thickness)
1 Tbsp oil
½ tsp dried rosemary
S & P TT (to taste)
½ c apple cider
1 tsp Dijon mustard
3 cups cooked rice
3 tbsp butter
¼ c chopped pecans
Salt

Prepare chicken and set aside. Heat oil in a large sauté pan over med high heat. Season chicken with salt, fresh ground black pepper and rosemary. Place in the pan and DO NOT disturb for about 2 minutes, lower heat if needed, but not below med. When chicken will move easily, turn over and cook other side until done, about 2-3 minutes per side. Remove to a plate and add cider to the pan, stirring to loosen the browned bits – add the mustard and cook over med heat until has reduced to a thickened glaze. Return chicken to the pan and coat evenly.

Rice:
Heat butter in a sauté pan (can use the one from the chicken if you wish) and cook over med heat until LIGHTLY browned. Add the pecans and stir continually for 30-45 seconds. Remove from heat and add rice, stirring continually. Add salt per taste. Serve with rosemary cider glazed chicken and enjoy!

ALL IN ONE MAGIC BATHROOM CLEANER

Seriously… Just do it. You will never buy another store bought cleaner again. This stuff is amazing!! I could rave about it all day, but then you’d be sitting here reading what I have to say instead of making it. So go make some now! And SHARE it on your page so your friends can make it too!!

What you need:
-1 Professional Spray Bottle (it is worth the extra $1, trust me!)
-8 oz. Distilled White Vinegar (***use orange infused vinegar!***)
-4 oz. Lemon Juice
-2 oz. Liquid Soap (I use Dawn)
-2 tsp. Baking Soda
-10 oz water

To Mix:
Funnel in all the ingredients, squeeze out the suds, screw on your cap and go make your bathroom sparkle!

To Use:
Clear the surfaces, use toilet tissue to wipe off any dirt, hair, spilled liquids, ect. Using the lightest spray setting, spray down everything- sink, counter, mirror, faucets, tub and the whole toilet, inside and out. I let it sit while I sweep the floor. I then use a microfiber cloth to wipe down the surfaces from the cleanest to the dirtiest. In our house that means mirror, faucets, sink, tub/shower and then the toilet. Be sure to rinse out the tub/shower really well so it isn’t slippery.

Stubborn stains in your tub?
Whether its a dirt ring at the top or dirt stuck in the textured bottom, this will solve your problem! Spray down the problem area heavily, and then using a sponge with a non-scratch scrubber, scrub in a circular motion. Again, rinse very well and then put on your shades because its going to be shiny!

Natural Citrus Vinegar Cleaners

I wasn’t too sure about the natural cleaners UNTIL I made the bathroom cleaner recipe…OH MY I AM A CONVERT / I AM SOLD FOR LIFE!
…economical…practical…REALLY works!  ((happy, happy face!))

Natural Citrus Vinegar Cleaners
Ingredients
  • Distilled white vinegar
  • Citrus peels — lemons, oranges, limes, grapefruit
  • Herbs — rosemary, thyme, & mint
  • Spices– whole cinnamon & cloves
  • Extracts–vanilla, almond, mint
  • Essential oils (optional)
Directions
MAKE THE SCENTED VINEGAR CONCENTRATE:
Use a 2 quart jar or sealable container. Add citrus peels, spices, herbs, and extracts (see suggested combinations below). Pour in enough vinegar to cover completely (approx. 5-6 cups). Cover tightly and let sit for at least 2 weeks (or as long as 1 month), shaking the jar every few days to redistribute contents. Strain liquid and store in covered jar or container for up to 1 year.DILUTING THE CONCENTRATE FOR USE:
Mix in a spray bottle using 1/3 cup scented vinegar concentrate for each 2/3 cups water. Add 3-4 drops essential oils or 1/2 to 1 teaspoon extract to enhance scent, if desired. Shake and use for cleaning most surfaces. Not recommended for granite or marble surfaces.

VINEGAR CITRUS COMBINATIONS:

1. Orange Spice. 4-6 cinnamon sticks, 1-2 tablespoons whole cloves, and 1 tablespoon almond extract, enough orange peels to fill jar.

2. Lemon Rosemary. 3-4 large rosemary sprigs, 1 tablespoon vanilla extract, enough lemon peels to fill jar.

3. Lime Thyme. 6 sprigs thyme, enough lime peels to fill jar.

4. Grapefruit Mint. 8 large sprigs of mint (or 1 tablespoon mint extract), enough grapefruit peels to fill jar.

Homemade Coconut Butter

Coconut ANYTHING these days is all the rage ~ with GOOD reason! Check out this site to see how to make your own…oh, yum!

Not only is this unbelievably good it is also the easiest thing to make and you only need one ingredient…

What you will need:

  • 5 cups of shredded unsweetened coconut (do not use coconut flakes or “reduced fat” shredded coconut, it will not work) *

* I purchase already shredded unsweetened coconut in bulk from my local natural grocery store.
Directions:

  1. Place the shredded coconut into a food processor and turn it on.
  2. Let it work its magic for about 10 minutes or until you have a nice creamy butter like consistency.
  3. That’s it!
